Sun-Dried Tomato Basil Pesto-Coulis Sauce (romantic vegan recipe)

Use the pesto-coulis in recipes like our Sultry Stack of Eggplant, Mushrooms, and Squash

Why pesto-coulis? Why not either pesto or coulis? Because it’s a marriage of the two—a happy meeting of the pesto and coulis minds, if you will.

Though they are both sauces, a pesto is traditionally a little thicker, and a coulis is somewhat smoother. Pesto typically includes a dry grated cheese such as parmesan, but coulis does not. Neither does our pesto-coulis blend. Coulis usually gets spiked with vinegar, while pesto does not. However our pesto-coulis hybrid does contain vinegar.

This pretty pink-amber sauce is a blend of the best of the two different individuals, with a result that’s kind of complex, rather deep, a bit spicy, and a little surprising, just like some of the best romantic partnerships.

SUN-DRIED TOMATO BASIL PESTO-COULIS SAUCE (romantic vegan recipe)

Ingredients:

3 medium size fresh tomatoes

10 sun-dried tomatoes (packed in oil)

½ cup pine nuts

20 large leaves fresh basil (may substitute with Italian parsley)

8 fresh garlic cloves

1/8 cup olive oil (or oil from jar of sun-dried tomatoes)

1/8 cup balsamic vinegar

Optional: crushed red pepper flakes, about 1 teaspoon, or to taste

Basil

Instructions:

Place all ingredients in blender or food processor. Blend or process till smooth.

Makes about 2 cups
