Leftover Veggie Soup (Vegan)

So you’ve got some odds and ends of leftover veggies taking up space in the fridge. Maybe it’s that steamed broccoli from last night, or the grilled zucchini you brought home from the restaurant the day before, and the last baked potato from the batch you made on Sunday. How to consolidate and transform them into something new and yummy for tonight’s dinner?

Easy! Throw them all together in the blender or food processor, add a few more goodies for zip and flavor, and five minutes later you’ve created a luscious Leftover Veggie Soup, as follows…

Ingredients:

4-6 cups of almost any type of cooked veggies (raw will work too)

1 medium onion

1-2 cloves garlic (according to your preference)

1 tsp each nutmeg, sage, chili or chipotle power (optional)

1 cup vegan milk (soy, almond, hemp, rice, etc.)

½ cup vegan Parmesan (OR 3 tablespoons soy or shoyu sauce)

1 cup chopped fresh basil, parsley, or cilantro (OR 4 tablespoons dried)

Garnish:

¼ cup chopped onion

Fresh herb sprigs or snips of wheat grass

Sprinkles of nutmeg, sage, and/or chili or chipotle powder

Instructions:

1. Place all ingredients in a blender or foot processor. Blend/process till smooth

2. Add vegan milk. Blend/process again for about one minute.

3. Transfer to a stovetop cooking pot and heat for about five minutes, stirring frequently.

4. Pour into serving bowls, garnish, and voila! Serve and enjoy.

Makes 4-6 servings
